Buttery Balsamic Green Beans – Candy Coated Culinista

Sweet, buttery, tart and salty and on a beautiful vegetable… this can’t get any better.

Ingredients
• Green beans, 2 handfuls
• 2 tbsp Vegetarian margarine
• 1 tbsp Agave Nectar
• 1 tbsp Raspberry Balsamic Vinegar
• 1/3 cup Dried Cranberries
• Feta Cheese, to taste

Assembly
1. Using a saucepan; bring water to a boil.
2. Add green beans into a steamer basket cover and reduce to medium heat and steam until just cooked.
3. Place steamed green beans in a bowl and add margarine, agave nectar and raspberry balsamic vinegar and coat.
4. Add dried cranberries and mix.
5. Plate and sprinkle feta cheese on top and serve.

My thoughts
I made this recipe with what was in my panty and fridge and this turned out amazing. I love how some of my best recipes come from just what is on hand at the time. I have already made this simple recipe twice already and I will continue to make this time and time again. The dressing is a great way to get that picky eater to at least take a few bites of a not so favorite vegetable. I did however have to take their portion; because I just knew it all wouldn’t be eaten. A valiant effort was made and it was appreciated.

Slightly altered from Smitten Kitchen Cookbook

Ingredients
• 1/3 of a medium green cabbage, shredded
• 1 English cucumber, thinly sliced
• 4 tbsp fresh dill, chopped
• ½ cup apple cider vinegar
• 2 tbsp kosher salt
• 2 tbsp sugar
• ½ cup cold water

Assembly
1. Shred the cabbage and slice English cucumber along with the dill into a large bowl.
2. In a small bowl pour in the apple cider vinegar, salt, sugar and whisk until it has dissolved.
3. Add in the water and whisk.
4. Pour liquid over the salad and let marinate.
5. Toss and mix occasionally using tongs; after an hour in will start to wilt.
6. Serve at this point if you’re in a rush or continue until two hours have passed and serve.

Tips
• Salad will keep covered in the fridge for a week.
• Use a mandoline if you have it. This took me no time at all now that I have invested in a mandoline.

My thoughts
I love a good coleslaw and this simple slaw is quick and easy. There is a bite to slaw which may be due to the use of apple cider vinegar instead off white wine vinegar. I added more dill and prepared the recipe to suit it serving 4 vs. the 12 servings in the original recipe. I can’t wait to taste this tomorrow when the slaw has had more time to marinate.

Prep Time: 5 min.
Cook Time: 10 min.
Difficulty level is: Easy

Ingredients
• 1.5 pounds Yellow, Red & Blue Mini potatoes, halved
• ¾ cup white vinegar
• 1 tbsp kosher salt
• 2 tbsp unsalted butter
• 1 stalk green onion, finely chopped
• Black pepper, to taste

Assembly
1. In a large saucepan bring water to a boil and cook potatoes until tender, about 10 minutes.
2. Drain in a colander.
3. Using a cast iron skillet on medium-high heat add in the butter and add in the potatoes face down as best you can and let brown for 5 minutes.
4. Add in the vinegar and salt and continue cooking until crisp.
5. Add a little black pepper and serve.

My thoughts
This is my new favourite way to make my mini gem potatoes. They’re crispy, crunchy and oh so tasty. I have cut potato chips from my diet and this really fills the spot for my cravings once and awhile. I am wondering what other types of potato chips flavours I can infuse this way dill pickle, ketchup or even all dressed maybe.
