Chicken Pepperoni Basil Crustless Pizza – Candy Coated Culinista

This fancier weekend chicken pizza dish is crustless and perfect dish.

Ingredients
• 4 skinless chicken breast, cut in half
• Kosher salt
• Black pepper
• 4 tbsp extra virgin olive oil
• 1 tbsp margarine
• 4 garlic cloves, thinly sliced
• 4 anchovy fillets, chopped
• ¼ tsp red pepper flakes
• 1 can crushed tomatoes
• Balsamic vinegar
• ½ green pepper, diced
• ½ small red onion, diced
• Handful of basil, chopped
• 100g mozzarella shredded
• 75g pepperoni, sliced
• Handful of whole basil for topping

Assembly
1. Preheat oven to 375°F.
2. Cut chicken breast in half to make them thinner.
3. Season with salt and pepper.
4. In a 9” cast-iron skillet, heat oil and margarine over medium-high heat.
5. Add the chicken in a single layer and sear until both sides are brown and just cooked through, about 10 minutes. Remove chicken and set aside on a plate.
6. Using the skillet add garlic, anchovy and red pepper flakes, sauté for 1 minute.
7. Pour in the crushed tomatoes, balsamic vinegar, green pepper, red onion, basil and cook for 5 minutes.
8. Add chicken back to the skillet and top with mozzarella, pepperoni and whole basil and let cook for 3 minutes or until cheese is bubbling and slightly browned.
9. Serve.

Tips
• Serve with pasta if desired.

So many Easter chocolates on hand and I have no intention of partaking…what am I to do of course make treats for my friends.

Ingredients
• 6tbsp butter, melted
• 1 cup light brown sugar, firmly packed
• 1 egg
• 1 tbsp, vanilla extract
• 1 cup all purpose flour
• ½ tsp baking powder
• 1/8 tsp baking soda
• ½ tsp salt
• 1 Easter solid white chocolate bunny
• Handful of Easter coloured Smarties
• 3 tbsp butter, for seasoning skillet

Assembly
1. Preheat oven to 350°F and place skillet inside oven.
2. In a small saucepan, melt butter.
3. Using an electric mixer cream butter, sugar egg and vanilla extract together.
4. Add flour, baking powder, baking soda and salt.
5. Using an oven mitt remove the skillet from the oven and add 3 tbsp of butter and coat the bottom and sides of the skillet.
6. Pour blondie mixture into greased pan.
7. Place Easter chocolate bunny in the centre of the skillet and using a spatula ensure batter is to the edges of the chocolate bunny.
8. Place Easter smarties on top of the batter; press in ever so slightly.
9. Bake for 20-25 minutes or until a cake tester inserted comes out clean.
10. Turn blondie out from skillet, cut into slices and serve.

My thoughts
Nothing beat a simple recipe that could be made with a short window of time. This took no time at all and the tiny piece of the blondie I had tasted great.

I have wanted to make a skillet cookie for a long time now; I mean I even bought a smaller 10” cast iron skillet just for this recipe… 8 months later and I’m finally here and just in time for this perfect Christmas recipe.

Cook Time: 18 – 20 min.

Ingredients
• 1 tbsp unsalted butter, room temperature
• ½ cup unsalted butter, room temperature
• ¼ cup sugar
• ¼ cup golden brown sugar
• 1 tsp vanilla extract
• 1 egg, room temperature
• 1 cup all-purpose flour
• ¼ tsp baking soda
• ¼ tsp salt
• 1 cup peppermint white chocolate chips

Assembly
1. Preheat oven to 350°F.
2. Butter skillet with 1 tbsp unsalted butter.
3. Using an electric mixer cream butter and sugars together for 1 to 2 minutes at a medium speed.
4. Add vanilla extract and egg until incorporated.
5. In a large bowl sift flour, baking soda and salt together.
6. Decrease speed to slow and add the flour mixture, and don’t overmix.
7. Using a spatula fold in the peppermint white chocolate chips.
8. Pour cookie dough into the prepared cast-iron skillet.
9. Smooth the top with a spatula and bake for 18 – 20 minutes.

Tips
• Add 2 – 3 minutes if you want a crispier cookie.

My thoughts
Once again I found this to be extremely sweet, but my taste tester thought the sugar level was fine. Another taste tester thought it was sweet also; so this recipe has mixed reviews on the sugar level. I have halved the sugar to my liking as the chocolate chips are sweet also. I found the skillet cookie very hard to remove from the skillet, even though it was well greased. The next time I think I will try adding a layer of parchment paper and test the result.

I am finally starting to love my skillet, don’t get me wrong I still find cooking certain proteins on it a little challenging; but every day it get better and today I am trying to bake a whole bird using the skillet.

Ingredients
• 1 small whole chicken
• Season salt
• Paprika
• Sea salt
• Black pepper
• Garlic powder
• Onion powder
• 3 tbsp, extra virgin olive oil
• 4 medium potatoes, cut into wedges
• 4 stalks celery, rough chop
• 4 carrots, rough chop
• 1 small onion, sliced
• Handful, green beans
• 2 fresh sprigs, rosemary
• 8 chives
• 6 cloves garlic, rough chop

Assembly
1. Preheat oven to 400°F.
2. Season whole chicken rubbing seasoning onto chicken.
3. Pour olive oil into skillet and place potatoes on the bottom of the pan.
4. Place celery, carrots, onion, and green beans around the side, leaving space for the whole chicken in the middle.
5. Stuff the rosemary, chives and garlic into the cavity of the chicken.
6. Place chicken into the middle of the skillet and bake for 15 minutes.
7. Then reduce temperature to 375°F and bake for about 45 minutes.
8. The internal temperature should be between 150°F – 165°F, or cut into the thigh meat at the joint and if the juices run clear it is ready.
9. Let rest for 10 minutes and serve with vegetables.

My thoughts
This is my best roast chicken to date. It was so fragrant, juicy and succulent and I could smell the rosemary, chives and garlic throughout the chicken. Cooking the whole recipe in one pan made me so happy as I really dislike using multiple pot and pans, but most times it is needed. The only thing I would change is putting the potatoes in first let cook and then the whole chicken followed by the carrots, celery and green beans.

When I was a child pasta night was always Friday and my mom would make her tried and true pasta dish. I have been reminiscing and thinking about my mom more than usual lately and I decided to pay homage and make my version of her dish.

Difficulty level is: Easy

Ingredients
• 4 cups Penne Rigate
• 2 lbs lean ground beef
• 1 tsp Sea salt
• ½ tsp Black pepper
• 1 tsp Paprika
• ½ tsp Season salt
• 1 tsp Onion powder
• ½ tsp Garlic powder
• 4 cloves garlic, finely diced
• ½ cup white mushrooms, chopped
• half of one small white onion
• ½ cup of grape tomatoes, halved
• 2 cups marinara sauce
• Generous handful of Italian parsley
• ½ cup of mozzarella cheese
• ½ cup of cheddar cheese
• ¼ cup of parmesan cheese

Assembly
1. In a large pot of boiling salted water cook penne until al dente.
2. Drain in a colander once cooked.
3. Using a 12” cast iron skillet brown the ground beef and add the salt, pepper, paprika, season salt, onion powder and garlic powder.
4. After 5 minutes stir in the diced garlic along with the mushrooms, onion and grape tomatoes and let cook for another 5 minutes, stirring occasionally.
5. Pre-heat oven to 375°F.
6. Stir in the marinara sauce to the meat mixture and add parsley and cook at a simmer for 5 to 7 minutes.
7. Pour pasta into the skillet and incorporate into the meat mixture.
8. Sprinkle the cheese on top and bake for 10 minutes to allow cheese to melt.
9. Serve.

Tips
• Freeze some to bake at a later time.

My thoughts
I was so happy with how this tasted and turned out and it was true to my mom’s dish. My mom used a stovetop skillet; but since I have a nice cast iron skillet I decided to take it to the oven and bake it in the dish. I just wish the thing was a little lighter is all.
