Herby Vegan Compound Butter – Candy Coated Culinsta

I love compound butter; but I don’t necessarily want to partake in all the yummy delicious artery clogging full fat butter. Therefore, here is my version of compound butter that I use on veggies and on proteins.

Prep Time: 10 min.
Difficulty level is: Easy

Ingredients
• 400g vegan margarine
• 1 tbsp fresh rosemary
• 1 tbsp fresh thyme
• Handful fresh dill
• Handful fresh parsley
• 2 tbsp fresh oregano

Assembly
1. Using a food processor chop fresh herbs
2. Place vegan margarine in food processor.
3. Blend herbs and butter together.
4. On a long piece of wax paper place butter in the middle and form butter into a cylinder.
5. Twist the edges and place in freezer for 30 minutes.
6. Take butter out of the freezer and cut butter into discs and roll back up and use as needed on vegetables or meat.

My thoughts
I love having a stack of discs in my freezer to use whenever I want. It is handy and an excellent way to use up all those fresh herbs that may be about to turn.

One of the few Caribbean foods I have always loved was plantain whether fried or boiled and put in a soup. Probably it was the sweetness of the plantain as is ripened that caught my attention as a child; but even today when I find plantain in the store I think back to my mom frying it when it was over ripped and ooey gooey to serve alongside my breakfast. I went to a food market at lunch, and I saw this wonderfully fried whole plantain just staring back at me and I just knew I had to try it and it didn’t disappoint.

Yield/Serving: 1
Prep Time: 5 min.
Cook Time: 10 min.
Difficulty level is: Easy

Ingredients
• 4 tbsp canola oil
• 1 plantain, peeled and sliced in the centre, but not all the way through
• 3 tbsp cream cheese
• Fresh rosemary, removed from sprig
• Pinch of sea salt

Assembly
1. Over medium-high, using a frying pan heat up canola oil.
2. Place plantain in and fry all sides until golden brown and the colour has changed.
3. Drain on a paper towel if necessary.
4. Using a small bowl mix cream cheese & rosemary and stuff into the plantain.
5. Sprinkle with sea salt and serve.

Tips
• If you have time bake this bake at 400° for 30 minutes; instead of frying.

My thoughts
I did my own spin on this Ecuadorian dish as the way it was prepared had ricotta stuffed inside. I used cream cheese and added some fresh thyme because it just felt right to me. This is a new preparation for me that I never knew even existed. I am very happy to have stumbled upon this in the market. Plantains Assados con Queso means baked plantains with cheese; but I took a quicker approach and fried it. Try baking it as it would turn out just as well. I made this while preparing breakfast before work yesterday morning, so I had less time. The plantain was soft on the outside and firmer as you got further in. The filling was creamy with the punch of thyme. I’m not really a fan of cream cheese unless it’s on my bagel; but it works so well and I gave a piece to my testers and they loved the cream cheese and thyme combo.

I have been wanting to try the Fish & Chips from Len Duckworth’s Fish & Chips; as this has been recommended to be numerous times is a Toronto Foodie institution if you will. I’ve had a bad experience with fish & chips from Pickle Barrel and ever since I just haven’t had the desire to have anythimg resembling deep-fried fish. I found it to be extremely greasy and the batter didn’t stick to the fish so I just never wanted to try it again. Then I found saw this recipe and with fresh fish in hand I thought I’d give it another go and make sure I visit Duckworth in the near future.

Ingredients
Oven Fries
• 2 small yellow potatoes, cut into wedges with skin on
• 1 tsp extra virgin olive oil
• Pinch of sea salt
• Pinch of ground black pepper
Crispy Tilapia
• 2 tbsp cornmeal
• ¾ tsp chili powder
• ¾ tsp dried parsley
• 2 tilapia fillets
• 1/8 tsp kosher salt
• 1/8 tsp ground black pepper
• 1 tbsp extra virgin olive oil
Lemon-Herb Mayo
• 2 ¾ tsp mayonnaise
• 1 ½ tsp chopped fresh parsley
• 1 tsp lemon juice
• ½ garlic clove, finely grated

Assembly
Oven fries
1. Preheat oven to 425°F.
2. Toss potatoes, salt & pepper in a small bowl with extra virgin olive oil.
3. Spread evenly on a baking sheet, turning once and bake for 25 minutes until golden and tender.
Crispy Tilapia
1. In a plate mix the cornmeal, chili powder and parsley.
2. Sprinkle salt and pepper onto fish and dredge in the cornmeal mixture.
3. Using a frying pan, heat half the oil over medium heat.
4. Cook tilapia turning once until fish is cooked, about 8 minutes.

Lemon-Herb Mayo
1. In a small prep bowl mix the mayo, parsley, lemon juice and garlic.
2. Serve.

My thoughts
This is a light and slightly healthier fried fish option and the fish didn’t taste fishy and was still flakey. The lemon-herb mayo was such a great addition and this will be my new tartar sauce.

If you’re tired of the usual brown gravy with your Thanksgiving and Christmas dinner then this is a great recipe for you. A cream based gravy has never touched my lips before this recipe; but after today my mind has been changed for the better.

Cook Time: 10 – 15 min.

Slightly altered from Longos Experience

Ingredients
• Turkey pan drippings
• 2 tbsp butter
• 2 tbsp vegetable oil
• ½ small onion, chopped
• 2 tbsp all-purpose flour
• 2 tbsp Dijon mustard
• 1 ¼ cup vegetable broth
• ¼ cup heavy cream
• 1 tsp basil
• ½ tsp oregano
• ¼ cup fresh parsley, finely chopped
• Sea salt, to taste
• Black pepper, to taste

Assembly
1. Melt butter in a saucepan over medium-high heat.
2. Add onion and sauté until golden.
3. Whisk in flour and mustard.
4. Pour in vegetable broth, cream, basil and oregano and bring to a boil.
5. Simmer for 10 minutes, stirring often.
6. Remove from heat and add parsley, salt and pepper.
7. Serve.

My thoughts
This is the first cream based and white gravy I have made as I am not a fan of cream based gravy. This recipe has changed my mind and I think a creamed based gravy will be made once and awhile now.
