• Use turmeric powder if you can’t find turmeric roots

My thoughts
I love the colour and smell of this smoothie and I can totally handle turmeric now. It’s all about the dosage and now that I am using the right quantities and not purchasing turmeric cold pressed juices. I am a huge fan now and I notice all those health benefits associated with this root in this smoothie.

Ingredients
Cake

• 1 Pineapple peeled, cored and cut into chunks along with some for garnish
• 2 large eggs
• 1 tsp vanilla extract
• ½ packed cup plus 1 tsp light brown sugar
• ½ cup granulated sugar
• 2/3 cup sunflower oil
• 1 ½ ripe bananas, peeled and mashed
• 1/3 cup shredded coconut
• 1 ¾ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp ground cinnamon
• ½ tsp ground ginger
• ½ tsp ground cardamom
• ½ tsp salt
Frosting
• ¼ large ripe mango, peeled and roughly chopped
• 4 ½ tbsp. unsalted butter, at room temperature
• 100g cream cheese, at room temperature
• 2/3 cup confectioners’ sugar, sifted
Topping
• ½ banana, cut into slices
• ½ large ripe mango, cut into long thin strips
• 55g pineapple flesh
• Scooped out seeds of 1 passionfruit
• 3 tbsp flaked coconut

Assembly
Cake

1. Preheat oven to 350°F.
2. Grease springform pan with non-stick spray and line the pan with parchment paper.
3. Place pineapple in a food processor and pulse until fruit is crushed.
4. If starting with fresh pineapple place in a medium saucepan over medium heat, bring to a simmer, and cook for 4-5 minute; ensuring it doesn’t boil or too much liquid evaporates. Then transfer to large mixing bowl. (If using canned pineapple skip this step)
5. Using an electric mixing with the whisk attachment place eggs, vanilla extract, brown sugar and granulated sugar and mix.
6. Beat on medium-high speed for 3 minutes until creamy; then on medium speed pour in oil in a slow steady stream until combined.
7. Add to the bowl of cooled pineapple along with mashed bananas and finely coconut and combine.
8. Sift flour, baking soda, cinnamon, ginger, cardamom and salt together into the wet mix and using a spatula fold until combined.
9. Pour cake into pan and bake for 50 minutes or until a cake tester inserted comes out clean.
10. Remove from oven and let cool in pan on wire rack for about one hour then turn onto a serving platter, carefully remove the parchment paper and set aside to cool completely.
Frosting
11. Place mango into food processor and process until it becomes a puree. Pour into bowl and set aside.
12. Add butter and cream cheese to the food processor (no need to wash the bowl) and process until smooth.
13. Add confectioners’ sugar, pulse to combine, then add mango puree.
14. Pulse again until evenly mixed and scrape into a bowl.
15. Keep in the fridge covered for 2 hours as it need time to thicken before frosting the cake.
16. Spread thick layer of mango frosting over the top and sides.
17. Place fruit in a small bowl, mix gently and spoon onto top of cake in the center.
18. Pressing flaked coconut into the sides of cake and serve.

Tips
• Cream cheese frosting can be made a day ahead.
• Unfrosted cake will keep for about 3 days in an airtight container. One frosted best eaten the same day. Leftovers can be kept in the fridge for two day max and just bring cake back to room temperature before serving.

My thoughts
This is another amazing recipe from this book. I am not the biggest fan of Ottolenghi savoury cookbooks primarily because of how hard it is to source those weird ingredients and I have two on my shelf. I am so so happy I took the gamble and gave Sweet a shot. My only let down was the mango frosting; which split even though I followed the directions exactly. The frosting split the moment the mango puree hit it and it really bothered me. I decorated my cake with coconut chips to add a little more texture and effect and lessened the amount of sugar by half. (I only used ½ cup of granulated sugar and omitted the ½ cup light brown sugar). This cake was divine and reminded me of a spin on a Christmas fruitcake; but white instead of the usual brown and laden in liquor. The reviews were great everyone loved it and I was told this was one of the best cakes I’ve made (Thanks Sweet). I really enjoy these fruit based desserts rather than the cakes with all the thick frosting atop. Once I figure out the frosting situation or just omit the mango puree portion this will be in my top five recipes.

Dole Whip

What in the world is a Dole Whip and why is it only at Disneyland and Disney World? Dole Whip is a soft serve or float consisting on pineapple created by the Dole food company in 1986 and I need to try this.

• 2 cups frozen pineapple chunks
• 1 frozen banana, cut into chunks
• ½ cup unsweetened coconut milk
• Fresh pineapple wedge, if desired

Assembly
1. Using a blender, blend pineapple, banana and coconut milk until very smooth.
2. Pour into glass and decorate with pineapple wedge.

My thoughts
When I heard dole whip I was immediately curious and wanted to make a version of my own. Now I don’t eat much ice cream and I haven’t really ever enjoyed a float; but a smoothie I’m all for and making the Dole whip into a smoothiesque consistency treat is right up my alley. Pineapple has always be one of my favourite fruits so trying this Disneyland essential was a no brainer for me and I will be making this again and again.

• ½ raw beetroot, peeled and cut into chunks
• Handful of cranberries
• 1 small knob of ginger
• 1 banana, cut into slices
• 3 tbsp plain yoghurt
• ½ cup water
• Few ice cubes

Assembly
1. Prepare vegetables and fruit and place in blender jar.
2. Add yoghurt, water and ice and blend for one minute.

I’ve always loved beets and this smoothie with its natural sweet touch from the beetroot and slight kick from the ginger is a wonderful fall smoothie.

One of the few Caribbean foods I have always loved was plantain whether fried or boiled and put in a soup. Probably it was the sweetness of the plantain as is ripened that caught my attention as a child; but even today when I find plantain in the store I think back to my mom frying it when it was over ripped and ooey gooey to serve alongside my breakfast. I went to a food market at lunch, and I saw this wonderfully fried whole plantain just staring back at me and I just knew I had to try it and it didn’t disappoint.

Ingredients
• 4 tbsp canola oil
• 1 plantain, peeled and sliced in the centre, but not all the way through
• 3 tbsp cream cheese
• Fresh rosemary, removed from sprig
• Pinch of sea salt

Assembly
1. Over medium-high, using a frying pan heat up canola oil.
2. Place plantain in and fry all sides until golden brown and the colour has changed.
3. Drain on a paper towel if necessary.
4. Using a small bowl mix cream cheese & rosemary and stuff into the plantain.
5. Sprinkle with sea salt and serve.

Tips
• If you have time bake this bake at 400° for 30 minutes; instead of frying.

My thoughts
I did my own spin on this Ecuadorian dish as the way it was prepared had ricotta stuffed inside. I used cream cheese and added some fresh thyme because it just felt right to me. This is a new preparation for me that I never knew even existed. I am very happy to have stumbled upon this in the market. Plantains Assados con Queso means baked plantains with cheese; but I took a quicker approach and fried it. Try baking it as it would turn out just as well. I made this while preparing breakfast before work yesterday morning, so I had less time. The plantain was soft on the outside and firmer as you got further in. The filling was creamy with the punch of thyme. I’m not really a fan of cream cheese unless it’s on my bagel; but it works so well and I gave a piece to my testers and they loved the cream cheese and thyme combo.

As much as I try as sometimes my bananas spoil and I just hate wasting, so here we go again a couple more banana bread recipes for the New Year. This is what happens when it’s the Christmas season and you’re going out and enjoying time with friends and family. At the rate I’m going I will have enough banana bread recipes for a whole month.

Cranberry Coconut Banana Bread

Ingredients
• 1/3 cup of butter, melted
• 1 egg
• 1 cup 2% milk
• ½ tsp vanilla extract
• 2 ripe bananas, mashed
• 1/3 cup fresh cranberries, roughly chopped
• 1/3 cup shredded coconut
• 1 cup all-purpose flour
• 1 tsp baking soda
• ¼ cup granulated sugar
• Dried cranberries
• Coconut slices

Assembly
1. Preheat oven to 375°F.
2. Grease pans.
3. Over low heat melt butter.
4. In a small bowl whisk together butter, eggs, milk and vanilla extract.
5. In a medium sized bowl mash the bananas and add the cranberries and shredded coconut and set aside.
6. Using a large bowl whisk flour, baking soda, sugar and add the bananas, cranberries and coconut.
7. Make a well in the center and add the wet ingredients and gently stir; but don’t overmix.
8. Spoon batter into pan.
9. Top with dried cranberries and coconut slices.
10. Bake for 1 hour or until a cake tester inserted comes out clean.

I just can’t get enough of banana bread no matter the combination and it’s such a great way to use those over ripe bananas. Both these recipes were lovely and I’m now becoming a fan of decorating the tops of my banana breads with dried fruits as it adds a nice classy touch.

I’m always the person friends and family ask “do you have this” to which I reply yes give me a second. I was never a Girl Guide but I’m always prepared for any eventuality. This includes a day trip out of town I brought healthy snacks and well of course I brought too many and my bananas started to look a little too ripe for me by the end of our day. With over ripe bananas on hand I had no choice but to bake something and a new recipe at that.

Ingredients
• 1/3 cup of margarine, melted
• 1 egg
• 250g yoghurt
• ½ tsp vanilla extract
• 3 ripe bananas, mashed
• 2 carrots, peeled and shredded
• 1/3 cup frozen cranberries, roughly chopped
• 1 cup self-rising flour
• ¼ cups golden brown sugar
• Extra sugar to sprinkle

Assembly
1. Preheat oven to 375°F.
2. Place muffin cups in muffin trays and set aside.
3. Over low heat melt butter.
4. In a small bowl whisk together butter, eggs, yoghurt and vanilla extract.
5. In a medium sized bowl mash the bananas and add the shredded carrots and cranberries and set aside.
6. Using a large bowl whisk flour, sugar and add the bananas, carrots and cranberries.
7. Make a well in the center and add the wet ingredients and gently stir; but don’t overmix.
8. Spoon batter into muffin cups two-thirds full and sprinkle with extra sugar.
9. Bake for 20 to 25 minutes or until a cake tester inserted comes out clean.

This was a delicious combination, I just found it too sweet for my liking and I have reduced the sugar amount in my recipe above. I combined two types of muffins I enjoy into one and it turned out well. The burst of cranberries with each bite was a great surprise splash of tart.

I have been craving my super moist carrot cake; but as per my usual I hate repeating recipes over. This means I’m putting a spin on it with bananas.

Prep Time: 1 hour
Cook Time: 55 min.
Difficulty level is: Medium

Ingredients
• 2 cups all purpose flour
• 1 tsp baking soda
• ½ tsp sea salt
• ½ tsp ground cloves
• ½ tsp nutmeg
• ½ tsp cinnamon
• ½ tsp ginger
• 1 cup mashed bananas ( 3 ripe bananas)
• ¼ cup fresh applesauce (1 red delicious & 1/3 cup water – blended)
• ½ cup golden brown sugar
• 1/3 cup vegetable oil
• 2 eggs
• ¾ tsp vanilla bean paste
• 2 cups grated carrots (4 carrots)

Assembly
1. Preheat oven to 350°F.
2. Spray a pan with vegetable oil spray.
3. In an electric mixer bowl whisk together the flour, baking soda, salt, cloves, nutmeg, cinnamon and ginger.
4. In a medium sized bowl whisk together the bananas, applesauce, brown sugar, vegetable oil, eggs and vanilla paste.
5. Add wet ingredients into the electric mixer at medium-low speed alternating with the carrots until just combined.
6. Pour the batter into the prepared pan and bake for 55 minutes or until a cake tester inserted comes out clean.
7. Let cool in pan for 10 minutes and then remove from baking pan and let cool on a cooling rack.

My thoughts
I finally got to grate some carrots using a proper grater; it made my life easy for sure. My arm still hurt but it was much easier which I was thankful for. I love making breads; but I always forget that the prep time is so much longer than cake for me. An hour into prepping and I was even saying to myself how long have been prepping. This cake was so moist I had to double check the doneness of it. It indeed was fully baked it was just that moist and dense. I could taste the different spices and it wasn’t sweet at all. My taste testers loved it and were very happy I thought of them and brought and saved them some bread. Even one taster that isn’t keen on fruits and veg in their baked goods even eagerly asked my to save a slice and it was enjoyed.

Mr. C. and myself have been a little under the weather lately and that means we are not eating our fresh produce fast enough. The bananas were black at this point and that meant I needed to make some banana bread.

Cooking Time: 1 hour & 20 minutes

Ingredients
• Non-stick cooking spray
• 8 tbsp unsalted butter, softened
• ¾ cup golden brown sugar
• 2 eggs
• 2 cups all-purpose flour
• ¾ cup self-rising flour
• 1 tsp baking soda
• 2/3 cup vanilla rice milk
• 4 medium very ripe bananas, peeled and mashed
• 1 bosc pear, peeled and mashed
• 1 cup shredded coconut
• ½ tbsp coconut extract
• 1 yellow banana to decorate

Assembly/Method
1. Preheat oven to 350°F
2. Spray loaf pan with cooking spray.
3. Cream the butter and sugar together in an electric mixer until smooth.
4. Add one egg and beat in until it is well combined, then add the second egg and continue to beat.
5. Sift in half the flour with baking soda and mix well.
6. Add the rice milk and the remaining flour.
7. Fold in the mashed bananas, pear and shredded coconut into the batter along with the coconut extract.
8. Pour into greased loaf pan.
9. Slice the yellow banana and place over bread dough in the loaf pan.
10. Bake for 80 minutes or until a cake tester inserted in the center comes out clean.
11. Let cool for 20 minutes and then take out of pan.
12. Cut into thick slices and serve.

My thoughts
I received some resistance when I said I wasn’t sure what I was going to add to the banana bread, as I can never keep a recipe simple. All Mr. C. wanted was plain old banana bread without nuts; and I did keep my promise of no nuts. This was my best banana bread yet, and it reminded me of the Caribbean coconut sweet bread I’d have all the time as a child. Moist, dense with just enough sweetness and I could taste the coconut and banana.
